The Team:
Roberto Catervi – Chef & Founder
At Roberto Pizza Romana, every dish tells a story—and Roberto’s journey begins in Cingoli, a small village in the Marche region of Italy. Trained at IPSSART “Varnelli”, he refined his craft internationally, working in London alongside Michelin-starred chef Edoardo Ferrera, his mentor. Returning to Italy, he joined the prestigious Madonnina del Pescatore in Senigallia (2 Michelin stars) before becoming head chef at Ristorante Moma Roma, where he earned his own Michelin star at just 27 years old.
A fateful encounter changed his path: while leading Moma, he met Geneviève Parent, a Franco-Ontarian with a deep passion for gastronomy. Their love for food brought Roberto to Canada, where he began working at L’Orée du Bois before joining Les Fougères as a sous-chef alongside Yannick, Charles, and Jennifer.

At Roberto Pizza Romana, hospitality is just as important as the food, and Geneviève Parent is at the heart of that experience. Her journey in the restaurant industry began at Le St-O on Beechwood, where she discovered her passion for exceptional service. She then spent over seven years at L’Orée du Bois, specializing in group service and event management, refining her expertise in creating memorable dining experiences.
It was during a catering trip to the Canadian Embassy in Romania with L’Orée du Bois that Geneviève made a stop in Rome—a detour that would change her life. While dining at Ristorante Moma Roma, she met Roberto Catervi, the restaurant’s head chef. Their shared love for gastronomy sparked an instant connection, leading them to build a life and career together.
