At Roberto Pizza Romana, we craft each loaf with passion and precision. Our breads are made with 100% natural sourdough, ensuring deep flavors and optimal digestibility. For our pizza, focaccia, and baguette, we use a small amount of fresh yeast to create the “BIGA” pre-ferment, which enhances lightness and complexity.
We carefully select the finest flours, including Agrobio and Moulin des Soulanges, both unbleached and sourced from Quebec. Our Italian-origin sourdough, carefully maintained since 2010, is the secret to the exceptional flavor and quality of our breads.
Signature Breads
Signature Batard
A harmonious blend of five organic Agrobio flours, offering a complex flavor and outstanding nutritional benefits. The addition of potatoes provides moisture and a delicate sweetness. This bread has been selected by renowned restaurants such as Les Fougères and L’Orée du Bois.

Spelt Bread
A balanced composition of 60% spelt flour and 40% organic white bread flour, creating a delicious and highly nutritious bread.

100% Rye Bread - Pumpernickel
A bold and tangy rye sourdough bread, naturally lower in gluten, with a rich, robust taste. Perfect to pair with smoked salmon.

Altamura / Khorasan
Inspired by the famous Altamura bread, this loaf is made with DOP semolina from Italy and Quebec-grown Khorasan wheat. Known for its thick crust, dense crumb, and rustic flavor, this specialty from Puglia has received the Protected Geographical Indication (PGI) status from the European Union.
Ingredients: DOP semolina (Altamura), whole Khorasan, water, natural sourdough, malt, salt.
Charcoal Sourdough
Strikingly black, subtly flavored. Made with activated charcoal and organic flours from Quebec — light, unique, and naturally full of contrast.
Pizza Crust
A light and ultra-crispy crust made with five exceptional flours, including Altamura semolina and Quebec flours. Long fermentation ensures perfect texture and optimal digestibility.

Focaccia
Made with the same blend as our pizza and baguettes, this soft focaccia is generously infused with olive oil and topped with local, seasonal ingredients.
